About This Position
You will prepare a variety of food items following assigned work instructions and menus.
Â
You will report to a Food Service Director. This position is located onsite inside of a jail/correctional facility.
Â
Essential Functions/Main Responsibilities
- Prepare a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment.
- Know and comply with standard portion sizes, cooking methods, quality standards and kitchen rules, recipes and procedures.
- Follow assigned instruction to maintain levels of food products at line stations to assure smooth serving of food.
- Complete required production paperwork, while also assigning and supervising inmates in (as provided) in the completion of their required tasks. These could include food prep, serving, clean-up, pots, dishes, and sanitation (when applicable).
- Responsible for all aspects of controlling inventory. (when applicable)
- Maintain a clean and sanitary work station area.
- Following assigned recipes, prepares food items for broiling, grilling, frying, sautéing or other cooking methods by portioning, battering, breading, seasoning and marinating according to directions.
- Follow proper plate presentation and garnish set up for all dishes.
- Handle, store, label, and rotate all products in accordance to applicable state laws.
- Other responsibilities as determined by our needs.
What You'll Need
- High School Diploma or GED and/or equivalent experience. Must be at least 18 years of age.
- At least one (1) year of relevant cooking experience required.
- Prior experience cooking in a cafeteria or large volume production facility.
- Prior experience in a kitchen or large cafeteria setting.
- Experience with safety procedures as typical in a cafeteria or food service environment.
